This is the ultimate game day snack that lets you feed a crowd without missing a single play. Our recipe takes all the smoky, savory flavor of our Spice Madness BBQ Pulled Pork Seasoning and packs it into a cheesy, satisfying quesadilla. Thanks to the sheet-pan method, you can bake a huge batch all at once, making it the perfect no-fuss solution for parties or a hungry family. It's a true crowd-pleaser that's easy to make, even easier to devour, and the perfect way to use up leftover pulled pork.
Prep the Sheet Pan: Preheat your oven to 425°F. Lightly coat a large baking sheet with nonstick cooking spray.
Arrange Tortillas: Place 8 tortillas around the perimeter of the sheet pan, with half of each tortilla hanging over the edge. Place one more in the center, overlapping slightly, to completely cover the bottom of the pan.
Layer the Fillings: Sprinkle half of the shredded cheese evenly over the tortillas. Next, add an even layer of your prepared Spice Madness pulled pork, making sure to strain any excess liquid so the quesadillas don't get soggy. Finish with the remaining cheese.
Fold and Top: Place the remaining tortilla on top and fold the tortilla halves from the perimeter over the filling.
Bake: Place another baking sheet of the same size on top to weigh down the quesadillas. Bake for 20 minutes.
Finish Cooking: Remove the top baking sheet and bake for another 10-15 minutes, or until the top is golden brown and the cheese is bubbly.
Serve: Let the quesadillas cool for a few minutes before slicing into squares. Serve immediately with your favorite toppings for the ultimate game day snack.
